Rillettes are pure meat products. Recipes can be found in the oldest cookbooks and they are somewhat comparable to crackling malt. The bacon that is not pressed after melting and in which small meat pieces remain. The comparison is partly valid, but rillettes are pure pork and pork fat. The pork is simmered for several hours in its own fat and juice to obtain a stringy whole that melts in the mouth. The addition of 10% Ardennes ham, seasoned, cured, smoked and matured in the pure air of the Ardennes according to a strict artisanal process, ensures that we have a taste sensation that appeals to young and old. Rillettes are trendy and back!
