Umami is an unknown word for a lot of people. It’s a wonderfully subtle taste that is difficult to put into words. We filmed a young girl who portrayed these experiences using our five senses and five tastes. This was followed by a recipe rich in umami: risotto with shiitake, tomatoes, peas, fried chicken and Parma ham.
